Professor Ray Pine, Dean, Faculty of Management and Hospitality Technological & Higher Education Institute of Hong Kong, warmly suggested that I meet Dr Kwan Lui, Founder and Director, At-Sunrice GlobalChef Academy, and visit the splendid facilities of the school in Singapore. I’m delighted to say that the sentiment that At-Sunrice immediately transmits is unique: there is in the air a sort of elegant passion, together with a strong wave of well-aimed energy. The care for each detail is absolute but not invasive, and space is left for the soul. Because you understand that, here, culinary and F&B education is culture and at the same time a natural religion. At-Sunrice GlobalChef Academy is a certified institution that delivers a high-quality culinary and F&B education using a unique, synchronised study-apprenticeship pedagogy that seeks to maximise students’ employability and preparedness for careers as global chefs and F&B professionals.
Since its establishment in 2001, At-Sunrice GlobalChef Academy has been recognised by the Singapore Workforce Development Agency as a CET Institute for Culinary and F&B Management, and has been appointed to house the National Assessment Centre for F&B professionals.
Multiple pathways, using the national WSQ Framework, are available to students who can choose from a range of nationally recognised degree, diploma, certificate, modular, assessment-only and continuing education programmes according to their level of experience and commitment. In 2011, At-Sunrice opened a new WSQ integrated F&B Academy located at 28 Tai Seng Street, offering three full-time WSQ diploma programmes in Culinary Arts, Pastry and Bakery, and Food & Beverage Management; 4 WSQ certificates in Food & Beverage Operations, Pastry and Bakery, Culinary Arts and Beverage Operations; and WSQ Continuing Education Modular (CEM) programmes.
At-Sunrice provides students with various opportunities to further their culinary and F&B education by creating seamless progression towards a degree. Having signed degree articulation agreements with well-respected universities such as Johnson & Wales University (USA), University of West London (UK) and William Angliss Institute (Australia), At-Sunrice’s degree pathway programme is designed to stand apart with the right balance of academic studies, cultural exposure and work experience.
Students can begin their journey with At-Sunrice’s 18-month study and work diploma programme, where they are equipped with a solid set of skills and knowledge based on rigorous pedagogy, focusing on the East and West, Old World and New World Cuisines, Herbs and Spices, and Innovation and Technology.
Six bachelor degree tracks are available to At-Sunrice’s students upon graduation, offering them the opportunity to pursue their education further with undergraduate study at one of the three established international universities.
For individuals who require flexibility in timing and learning, two full online degree articulation programmes are also offered by Johnson & Wales University: a Bachelor of Science in Culinary Arts and Food Service Management, and a Bachelor of Science in Pastry Arts and Food Service Management.
Once more, I thought, Singapore is able to surprise me. At-Sunrice is the school you always dreamt of, so professional, well structured and equipped with the most advanced tools and technologies, but at the same time designed around the human being. On the one hand the student; on the other the customer, the future recipient of the skills and services of the F&B professional. Thus, there is absolute attention to values and attitude (integrity and meaning) before the rules, and a great respect for the culinary arts – yes, arts – with continual research and exchanges with masters from all around the world. The last guest was French chef Yannick Alleno, awarded eight Michelin stars and member of the elite circle of the world’s greatest chefs, who demonstrated his unique interpretation of texture and tastes.
When I say that we (I mean the Italians) have to start again from culture and education, well, At-Sunrice in its specific field is a perfect example; it’s an incredible benchmark.
My greatest admiration goes to Dr Kwan Lui: would that I were twenty years younger so that I could have chosen this path to such a fascinating degree and profession!
